The food wizard was recently spotted in Mumbai, presenting his culinary treasures at the grand Monaco Organic Food Festival. Here’s an excerpt from our candid colloquy…

 

 

  • Share with us your food philosophy.

 

There’s no philosophy about cooking. There is only one cooking and that is the one we love. For me cooking is about love.

 

  • Of late, there has been a global shift in food sensibilities. What is your view on that?

 

The world is evolving. There is a global move towards healthy eating and conscious living. People are curious about where their food comes from, how the flavors evolve on their palate and are keen on mapping out their food journeys. This has definitely enriched cuisines, menus, and brought about eager interaction.

 

  • What does this spell for you as a culinary genius?

 

I believe the more you share, the more you grow. Travelling the world is the best learning and this unfurls in the flavor palette as well. I enjoy the exchange of ideas, soaking up local nuances and getting to know more when I sojourn across the globe.

 

  • Decode your creative process for us.

 

It is tough to deconstruct, as once I hold the ingredients, I simply go along with the flow and instantly know what I am going to prepare. Rather inexplicable, but true.

 

 

  • So if not a chef, what would have you been?

 

Given my passion for sport, a football player for sure.

 

  • How do you unwind and relax?

 

It depends on my mood. Sometimes inertia works best and I desist from doing anything (laughs). Lounging at home energizes me in the best way possible.

 

  • A pearl of wisdom for budding chefs?

 

Believe in your dreams and work consistently towards making your dreams come true. Things have a way of falling into place magically.
