The culinary traditions in Delhi are known all over the world. The city’s flavourful dishes and aromatic cuisines gave birth to the Dehlnavi Trail. Known for showcasing the finest gastronomic experiences, ITC Hotels brought this heritage cuisine to the forefront in the city, and is now taking it pan India. Already very popular at Sheraton New Delhi, this signature cuisine symbolises a rich amalgamation of cultures.
Whether it’s in the use of millets in local and international cuisine or bringing Delhi’s love of flavourful food to the table, the skills of ITC Hotels’ master chefs never fail to prove the brand’s supremacy.
A Culinary Journey through Delhi’s Cultural Influences
Culture and heritage have always had a huge influence on the food history of any region, adding to the distinctiveness and personality of its cuisine. Delhi often welcomes people from different parts of the country to celebrate its vibrant spirit and presents a mosaic of diverse tastes led by the city’s fondness for good food. Through the ages, food reflects traditions passed down from history, and the city continues to keep them alive.
Indulge in the Legacy of Dehlnavi Cuisine
Dehlnavi is symbolic of not only a particular cuisine, but also a tradition steeped in various generations. From the legacy of Bahadur Shah Zafar’s reign to Marwari traders to the Punjabi settlers, each culture has contributed and left an indelible impression, resulting in the evolution of the Dehlnavi cuisine as we know it today. The diverse ways of preparation and accumulated culinary knowledge have given the dish its individuality and flavour.
Come and Savour the Timeless Flavours from Delhi
Celebrating this unique blend of different cultures and flavours, the Dehlnavi Trail offers an experience of some of the most iconic delicacies of Dehlnavi treasures, perfected by the master chefs at ITC Hotels. Among the mouthwatering specialties on the menu are Dilli ki Nihari, Nimona Pulao, Dal Dehlnavi, Dilli Butter Chicken, Baraf ki Handi, and many others.
Chef Manisha Bhasin’s Culinary Vision
Manisha Bhasin, Corporate Executive Chef, ITC Hotels noted that ITC Hotels was the first brand to showcase the Dehlnavi cuisine in 2005. Almost a decade later, the Delhi Pavilion was launched at the property to bring forth the most iconic delicacies of the Dehlnavi cuisine.
By honouring The Dehlnavi Trail, the team is thrilled to showcase the diversity of Delhi’s mixing cultures all over the country. It endeavours to replicate the rugged splendour of the Red Fort and Chandni Chowk’s flavours, while preserving Lutyen’s Delhi’s old-world charm.
