The Kashmiri state accompanies not just a rich heritage, but also some of the most flavorsome dishes the country is renowned for today. The aromas of fresh ginger, chilli, fennel, cloves and garam masala are frequent in their dishes. Dominantly non-vegetarian, you’ll find the cuisine made using chicken, fish, or mutton.

ROGAN JOSH
The delicious recipe is prepared by adding species, chillies, yogurt and other ingredients to the lamb or mutton meat. The red chilli adds red impart to the curry. Mostly, the aromatic dish is served with rice, roti or naan.
MUDAR PULAV
It’s a type of Kashmiri rice that is prepared using milk, sugar, ghee, dry fruits and a little saffron among other ingredients. The saffron gives the dish a beautiful colour while other ingredients give the dish a sweet taste.
MATSCHGAND
To those who love meat aroma, this is one of the cuisines to try while at Kashmir. It’s prepared using minced meats with other spices such as the red chilli gravy and other ingredients such as the nuts and dry fruits. Mostly, matschgand is served with jeera rice.
YAKHNI
The dish is prepared with lamb and yogurt gravy and spices, and no chillies are added. The dish is then flavoured with other ingredients such as the mawal flowers, bay leaves, cloves and onion paste, to make it more aromatic. It’s easily prepared by cutting lamb mutton into small pieces of about 5cm that are boiled in water and then yogurt gravy is added.
GOSHTABA
It’s a traditional delicacy dish made from minced mutton, spices, and yogurt. It’s mostly prepared during special occasions and holidays. It’s popularly known as “dish for the king “since it is prepared on royal occasions.
