The rich and vibrant characteristics of India are visible in each state, tradition, culture and the cuisine.
When it comes to food, each state has its own distinctive flavour. So, what does a country like India prefer for breakfast?
Andhra Pradesh
The Pesarattu Upma primarily combines two most popular dishes into one truly satisfying breakfast. The usual potato filling here is replaced with a semolina upma and the dosa is the traditional one made from the batter of ground gram lentils,
Kerala
The much healthy Puttu is made from rice and coconut. This dish is soft rice cake that is steamed inside a bamboo stalk. Fish curry, jackfruit perfectly compliment this dish. Rice flour is also used to make Appams and noodle like Idiyappams.
Madhya Pradesh
A traditional breakfast of the central part of India is Poha. But the poha combined with jalebi is the most famous breakfast of Indore. Pohas are light and fluffy rice dish with vegetables, cashew nuts and peanuts and topped with sev for added texture.
Goa
The patal bhaji commonly called as tonak is similar but very different to its Maharashtrian food called pav bhaji. The Goan version is a spicy curry made with potatoes, coconut, dry white peas and roasted whole spices. A Pita bread called Poi is stuffed with pork sausages called chorizo is a popular alternative.
Jammu and Kashmir
Kandurs are freshly baked breads from the local bakery made in tandoors. Served with butter, salty noon chai and sometimes eggs. During winters, these breads are paired with slow cooked lab paste called hareesa. Local breads like Girda and Pita bread Lavaas are served with tea made with milk, salt, baking soda and cardamom.
Manipur
A savoury bread called Tan is consumed with Changang or Black Tea. Tan can be deep friend or served with rice flour, salt and water. Temai Tan is traditionally consumed with turmeric powder, chopped garlic and freshly grated ginger bringing all the flavours together.
Punjab
Punjab’s love for crisp parathas are an open secret. These parathas can be stuffed with potatoes, radish, cauliflower, onions, cottage cheese, with chick peas curry or simply curd. with a dollop of butter. Punjab is famous for these stuffed delicacies for breakfast.
Uttar Pradesh
Sweet and savoury elements comprise of the state’s traditional breakfast. Breakfasts are usually deep fried stuffed puris called kachoris with lentils and served either with potato or pumpkin curry. Followed by a plate of deep fried hot and sweet jalebis.
Nagaland
Nagaland’s breakfast start at wee hours of the morning that includes a vast variety of red and brown rice served with variety of vegetables and meat dish. There are a total of 16 tribes in the region with each having their own variation. Sema or Sumi tribes usually consume dry pork with fermented soya chutney, steamed vegetables, beans and cabbage.
Sikkim
Phale is the most popular breakfast of the state if Sikkim. Usually consumed with local cow milk cheese called churpi and aloo dum. Most of the families start their mornings with lentils, vegetables, rice and chutney.
